Banana Chocolate Chip Protein Muffins

I got a packet from Tech Nutrition with a sample of their vanilla prozyme protein powder, and of course I had to make some healthy sweets at once. I have made these muffins once before, but this time when I used the protein from Tech Nutrition they became even better! I can`t even believe that these amazing muffins are healthy.. If you love bananas and chocolate, you just have to try these. They became so moist and tasty, simply delicious!

Banana Chocolate Chip Protein Muffins

Wet ingredients

1 large ripe banana

2 egg

100g greek yoghurt

1 tsp vanilla extract

0,5 dl milk

Dry ingredients

100g oat flour

40g vanilla protein powder 

*If you don`t have protein powder, add more oat flour instead. 

20g erythritol

1 tsp baking powder

1 tsp baking soda

1, 5 tsp cinnamon

1, 5 tsp cardamom

1/2 tsp salt

85-100g sugar-free chocolate

Banana Chocolate Chip Protein Muffins


1. Preheat oven to 350 degrees F. Line a standard muffin/cupcake pan with liners.

2. Add all the wet ingredients (except the milk) together in one bowl and mix it all together with a mixer.

3. Mix all the dry ingredients (except the chocolate) together in another bowl.

4. Pour some of the dry ingredients into the bowl together with the wet ingredients, mix it together with a mixer and pour some of the milk into the batter as well. Keep adding the dry ingredients and the milk every other time until it`s all well mixed together.

5. Add the chocolate into the batter and mix it carefully.

6. Divide the batter evenly between the cupcake liners and bake for about 15-20 minutes, or until a thin knife inserted into the center of the largest cupcake comes out clean. I used a ice-scoop to form the batter evenly.

7. Cool for 10 minutes and then remove cupcakes from the pan and then they are ready to enjoy!

This batter made about 15 normal sized muffins.
